Current Favorite: Greek Yogurt & Guava Breakfast Bowl

As much as I love to eat, breakfast is kind of a struggle. Most mornings, I’m lucky if I can finish my coffee. But I’m trying to do better and I’ve been thinking of ways to make breakfast a bit more interesting. That’s why I love the idea of Breakfast Bowls. And this Greek Yogurt & Guava Breakfast Bowl has been my current favorite!

I’ve been obsessed with all things guava lately. And guava paste is making my obsession easier. I love making it into a syrup because I can use it in many different ways.

As a kid, I remember my mother buying guava paste. I’d watch her slice it up and eat with cheese and crackers. It never appealed to me as a kid. But these days, I’m all about it. It’s pretty much a staple.

Guava Syrup

Ingredients

  • 2 cups Guava Paste - cubed
  • 1 teaspoon Honey
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Water

Directions

  1. In a medium sauce pan, add guava, honey, vanilla and water. Whisk over low to medium heat until guava cubes have dissolved. Let cool and transfer to jar. Keep refrigerated.

Guava Banana Granola Breakfast Bowl with Greek Yogurt via Atypical Familia by Lisa Quinones Fontanez

Ingredients:

  • Greek Yogurt – plain
  • Granola – I used Bear Naked Banana Nut
  • 1/2 Banana – sliced
  • Guava syrup

What I especially love about guava syrup is that it can be used for baking (see below) or drizzled over ice cream and French Toast or Pancakes.

Sometimes I get these ideas in my head and I’m so exited to try them. I made guava and cheese heart shaped pies sprinkled with powdered sugar and drizzled in guava paste (that I also made). But then they don’t look like I planned. Oh well…they taste good. I’ll work on presentation another day.

I try to start my mornings with a gratitude list. I try to start my mornings with a gratitude list. After meditating and writing my list, I opened my Beautiful You book. Describing myself in 25 words or less without using roles or physical features was not easy. It took a little time. But I did. Making healthy choices, setting boundaries is a daily practice.
